TURKEY SATAYS WITH PICKLED CARROT SALAD & JASMINE RICE

Our dinner tonight was just scrumptious. Love satay sauce and with the pickled carrot and apple salad was just delightful. I used turkey breast fillets and will certainly make this recipe again and again. The problem is that you cannot stop eating it.. 😊🤪🤤💛 Marinating the meat before cooking is the secret to these delicious turkey satay skewers. You can use pork, veal, chicken, lean rump steak or lamb leg steak if you prefer and it would work equally well. INGREDIENTS 50g (1/3 cup) unsalted roasted peanuts 2 Tbsp soy sauce 1 Tbsp lemon juice 1 1/2 Tbsp mirin 1 Tbsp curry powder 1 garlic clove, crushed 500g turkey breast steaks, cut into long strips 12 short wooden skewers, soaked in cold water for 20 minutes Peanut or olive oil, for brushing 160ml (2/3 cup) coconut milk 1 cup jasmine rice Pickled  carrot salad 2 Tbsp rice vinegar 2 tsp caster sugar pinch of sea salt 2 carrots, peeled 2 Lebanese cucumber, seeded or 4 celery stalks...

PORK STIR-FRY WITH CAULIFLOWER 'RICE

This was my first ever attempt to cook cauliflower 'rice'. I have to admit that it tasted very nice. I combined two recipes from the CSIRO low-carb diet cookbook and Superlegumes. See recipe below. FALAFEL WITH TOMATO & RADISH SALAD

I love falafels! Usually I make a tabouhle salad to accompany them, but we had a lot of radishes in the garden and tried this salad instead. I must say it was delish! A very refreshing salad. Today, I added some mini bocconcini, baby spinach, rocket and baby kale and a splash of lemon juice. It was beautiful!    Very easy to make and they are sooo tasty! I used bought Hummus, but you can make your own. It's very easy.
