AVOCADO CREMA

This is basically a guacamole with sour cream. You can use leftover guacamole to make this recipe. Ingredients  3 overripe avocados juice of 3 limes 90g sour cream 1 garlic clove, grated 1 1/2 tsp ground cumin 1 tsp smoked paprika 1/4 tsp allspice pinch of onion powder pinch of ground coriander sea salt to taste Method Halve the avocadoes lengthways, remove the stones and scoop out the flesh using a large spoon. Combine the avocado, lime juice, sour cream, garlic and spices in a food processor and blend to make a smooth thick sauce. Season with salt. Avocado crema is best used on the day it is made. Here it was served to accompany the Pork carnitas with pineapple adobo sauce .

LOLO DE TERNERA SANDWICH

This recipe was easy and very tasty! I had some capsicums in the fridge that had to be eaten and found this easy recipe from a new cookbook. I actually roasted the capsicums in the air-fryer and it really worked well. I used porterhouse steak instead of babette - cannot find it here. Also, I couldn't be bothered to make allioli so used store-bought mayo instead. I added some homemade BBQ sauce on the last half of the sandwich and it was also delicious! Ingredients 2 green capsicums (I used red & yellow ones) 3 Tbsp olive oil 2 garlic cloves, finely sliced finely grated zest of 1 lemon good pinch of chilli flakes 300g bavette steak (or porterhouse and even rump steak will work) 2 small ciabatta or small baguettes 75g Mahon or other melty cheese, sliced 2-3 Tbsp allioli or mayonnaise flaky sea salt and freshly ground black pepper Method Heat the grill on high (or airfryer if using) and blacken the capsicums all over, then pop them in a bowl and cover with plastic wrap. Leave unti...

MY SWEET, SALTY AND SUBLIME BHT

This was another easy meal for a Sunday dinner. I had some halloumi in the fridge that needed to be eaten and found this very tasty recipe. It took nothing to cook and it was delish. I used toasted Turkish bread rolls instead of pitta bread but followed the recipe for the rest of the ingredients: fried tomato slices with oregano, bacon, halloumi and tomato sauce with homemade rose harissa. Sooo good! Ingredients 4 streaky bacon rashers 2 tomatoes, thin disc trimmed from the top and base of each, then cut into thick slices 1 teaspoon dried wild oregano olive oil 250g block of halloumi cheese, cut into 6 slices 2 pitta breads or Turkish bread rolls freshly ground black pepper For the sauce 2 tablespoons tomato ketchup 1 tablespoon rose harissa Method Line a plate with a double layer of kitchen paper. Heat a frying pan over a high heat and fry the bacon until crisp on both sides. Remove and transfer to the paper-lined plate to drain.  Wipe the pan clean and place over a medium-high he...

STICKY KECAP MANIS AND LIME CHICKEN WINGS

Simple to make and delicious! A perfect midweek meal. Here served with Steamed aubergines with cherry tomato sambal from the same cookbook. The tomato sambal was a bit spicy but the fresh herbs helped to counteract the heat. “These chicken wings are the ideal party food – they’re simple to make and a real joy to eat,” says food writer Shu Han Lee. “You have to dig in with your hands, and you’ll certainly have to lick the sweet, salty, sticky mess off your fingers after.” Ingredients 4 tbsp kecap manis (check it’s gluten free if it needs to be) Juice 1 lime 2 garlic cloves, finely grated 2 tbsp vegetable oil, plus extra to grease ¼ tsp fine sea salt 500g free-range chicken wings 1 red bird’s eye chilli, finely chopped 1 spring onion, finely chopped Method Combine the kecap manis, lime juice and garlic, then divide the mixture between 2 bowls. Add the vegetable oil and salt to 1 bowl, then pour this over the chicken wings, making sure they’re evenly coated. Leave the chicken to mar...

THAI SAUSAGE ROLLS

I made these sausage rolls to take to a party and they were very popular and disappeared in no time. Many people commented how good they were.  This is my first recipe from this book and must say that I also thought they were delicious. Nat was the Australian MasterChef winner in 2024, and I really enjoyed watching her on the show. She was very creative.  I had to make the curry paste as is part of the ingredients in the sausage rolls filling, and I have some leftover paste that needs to be used soon, so it would really help to suggest recipes from the cookbook where you can use it.  This is her first book and even though the recipes are easy to follow, they could be a bit more detailed in some parts. However, I'm really looking forward to trying out many more recipes from it. Start by making the curry paste. If you have a TM, you can check the link below. Sai oua curry paste with Thermomix Ingredients 1 Tbsp coriander seeds 1 tsp cumin seeds 1 tsp black peppercorns 10 dr...

SAVOURY STILTON CHEESECAKE - TM

'A crumbly oatcake base, a layer of fig jam, creamy Stilton cheese and a scattering of balsamic-caramelised walnuts… this is a cheese board like never before. The sweetness of the fig jam and walnuts balances the salty, savoury Stilton, and there’s enough of a mix of textures that each bite is different. This is a rich, decadent final course for a dinner party.' This definition of the recipe, was what made me think of making it to take to an engagement party to which we had been invited, and where we had to bring a vegetarian dish..... The response was varied, as there were people there who did not like 'blue' cheese, others who loved it, and others who mistook it for a sweet cake, and felt a bit confused with it..... We liked it very much, but when I make it again, I will serve it with a green salad with balsamic dressing, or as a dessert, part of a cheese table..... and, a thin slice is just sufficient!!! Ingredients 200 g oatcakes, broken in pieces 125 g unsalted but...

BROWN BUTTER & SALTED CARAMEL SLICE

This is a scrumptious slice that goes fantastically well with a cup of coffee. It is very rich and you only need a small square, but you will go back for more every time you have a cuppa.... It is a recipe from Curtis Stone. Ingredients 1 cup (150g) plain flour, sifted 1/2 cup (110g) brown sugar 1/2 cup (40g) desiccated coconut 125g unsalted butter, melted 125g unsalted butter, extra 2 x 395g cans sweetened condensed milk 1/3 cup (80ml) maple syrup 1/2 tsp vanilla extract 1/2 tsp sea salt flakes 180g 70% cacao dark chocolate, chopped 3 tsp vegetable oil Sea salt flakes, extra, to sprinkle Method STEP 1 Position a rack in the centre of the oven and preheat to 180°C (160°C fan-forced). Lightly grease a 16.5cm x 26.5cm (base measurement) slice pan with baking paper, allowing 2 long sides to overhang. In a large bowl, combine the flour, sugar and coconut. Add the melted butter and stir to combine.  Spoon the mixture into the prepared pan and press firmly over the base....

CORNBREAD

There seem to be many different recipes for cornbread, and I have made a couple of them before, all very tasty. This one is very simple to prepare and it was very tasty. If there is something I will change when I cook it next, is the amount of oil. I thought it was a little bit too oily, and being a very moist bread, I do not think it needs so much. Still, no complaints. Ingredients 150g polenta 75g plain flour 1Tbsp baking powder 1 Tbsp sugar 1 tsp paprika 115g diced green capsicum 2 corn cobs, kernels removed 5 spring onions, finely sliced 1 bunch coriander, roughly chopped 3 eggs, lightly beaten 250ml buttermilk ( I didn't have buttermilk and used 15ml / 1 Tbsp cider vinegar and the rest to make a cup with full-cream milk and let it rest for 5 minutes. ) 170ml olive oil ( Next time I will use only 100ml oil) 125g goat’s cheese or feta ½ tsp chilli flakes sea salt & freshly ground black pepper Method Preheat the oven to 180C. Grease a 20 x 30 cm baking tin and line it with ba...

SALMAGUNDI

Almost a year ago, we had some friends for drinks and nibbles. I was going to make a couple of pizzas and had already made the pizza base but then I saw a sad post on another food group and there was a picture of this amazing platter called Salmagundi. The poor guy said that he prepared it to take to a party but it got cancelled. It's an European food group. Anyway, I had never heard of Salmagundi before and I googled it and apparently it is a British 17th century dish that is basically a salad but it always includes meat and fish and many times eggs and nuts presented in either layers or in a beautiful way. I decided to make it with whatever I had in the fridge and it was a great success. Delicious and healthy. I served it with a vinaigrette. For dessert we had my grandmother's Coconut slice . Beautiful night with great company.   P.S.: I have since made many variations of the dish and below are some of the ingredients I have used. More photos at the end. List of possible ing...
