COCONUT RICE WITH CRISPY GINGER, CHILLI AND PEANUTS

  This rice is one of our favourites to go with all sorts of dishes, but especially Asian cuisine. It's very easy to make and turns out great when you add the crispy topping.  Ingredients 2 cups of jasmine rice 1 can (400 ml) of coconut milk 1 ½ cups of water 1 teaspoon of salt (or to taste) Ginger, Chilli and Peanut Crisp 1 ½ tbsp olive oil 5 cm piece of ginger, peeled and julienned (40 g) 3 cloves of garlic, thinly sliced 2 red chillies, julienned 30 g coriander, chopped into 3 cm pieces 25 g salted, roasted peanuts, roughly chopped 1 tablespoon sesame seeds 1 lime, cut into 6 wedges, to serve salt Method Thermomix link In a medium-sized saucepan or a bowl, rinse the jasmine rice with several changes of cold water until the water runs clear. CHICKEN WITH MISO, GINGER & LIME

This recipe is amazing. Simple to make and super delicious. It's from Ottolenghi's Simple cookbook, and it would be amazing to serve it as part of a mezze type meal. According to the author, it can be made the day before and then kept in the fridge to be eaten at room temperature the following day. Just remember to get it out of the fridge at least an hour before. I didn't serve it with rice today as suggested, and made a chargrilled cauliflower salad  instead. The flavours from both recipes were so delicious and strong, that I ended up eating them separately. CURRIED LENTIL, TOMATO & COCONUT SOUP - TM

This is the second time I make this soup. It's super easy to make and it is yummy. I have made it to take to work for lunch. With the weather being a little cooler, soup is a nice thing to eat. It doesn't have many ingredients, but it has a lot of flavour. I have blitzed it a bit to make it smoother, but the first time I didn't and it was really delicious too.  Ingredients 2 tbsp coconut oil (or sunflower oil) 1 onion, finely chopped (160g) 1 tbsp medium curry powder ¼ tsp chilli flakes 2 garlic cloves, crushed 4cm piece of ginger, peeled and finely chopped (30g) 150g red lentils, rinsed and drained 1 x 400g tin of chopped tomatoes 25g coriander stalks, roughly chopped, plus 5g picked leaves, to garnish 1 x 400ml tin of coconut milk salt and black pepper Method Thermomix 1. HARISSA AND CONFIT GARLIC ROAST POTATOES

This is an amazing recipe. Loved the potatoes. It is relatively easy to make, but it takes quite a while to make because of the time you have the ingredients in the oven. However, it is really worth the effort. I can see myself making them over and over again. They were scrumptious! Here I used them to accompany a rabbit pie, but they would be lovely to accompany any meat. Or even as part of a vegetarian meal. You'll need to substitute the duck fat for olive oil and it might make a difference about how crunchy they are....  Tonight I halved the recipe. PIZZA BIANCA WITH POTATO, ANCHOVY & SAGE - TM

You can make this pizza using a store-bought base - I sometimes use the bread pizza bases - but if you want to have a very crunchy and light base, you can use the recipe below. This is for the Thermomix, but I am sure you can do it with a bread-maker or by hand. The result is going to be amazing. Make the dough up to 3 days in advance and refrigerate. The potatoes and mascarpone can be made the day before, ready to assemble. I’ve made a white pizza here, but put whatever you want on top. RICOTTA AND OREGANO MEATBALLS

This dish is perfect for making it ahead and just reheated the following day. It actually helps develop the flavours and it is even more delicious. The ricotta makes the meatballs very light and my husband reckons it would be the perfect dish to have with pasta. If you do so, make the meatballs smaller. This time it was our dinner for our Pure protein diet day, but I'd love to eat them next to oven cooked chips and a salad.
