OLIVE OIL FLATBREADS WITH THREE-GARLIC BUTTER

These flatbreads are really easy to do and they are just wonderful. Nothing to do with the bought ones. I am not very good with bread-making, and can't never get them to look like in the picture from recipe, but as the author say, it doesn't matter if there are holes; they make them look like homemade!! The main thing is the flavour!   Ingredients 2 ripe plum tomatoes 2 black garlic cloves, thinly sliced 1 tsp picked thyme leaves 1 tsp picked oregano leaves salt, flaked sea salt and black pepper FLATBREADS 200g strong white bread flour 1 tsp fast-action dried yeast 1/2 tsp salt 1 tbsp olive oil, plus extra for greasing and drizzling 120ml lukewarm water THREE-GARLIC BUTTER 1 head of garlic, top fifth cut off to expose the cloves 1 small garlic clove, roughly chopped 4 black garlic cloves, roughly chopped  10g parsley, finely chopped 1½ tsp caraway seeds, toasted and crushed  100g unsalted butter, softened Method Preheat the oven to 200°C fan. CHICKEN SHAWARMAS

A scrumptious recipe! I had never heard of 'shawarma' and it is one of the best street foods in the world, typical of Egypt. It is cooked in a similar way like doner kebabs. The marinade gives the meat a fantastic flavour. You can taste it already while you are cooking the chicken! It makes your mouth water. The first time I served it with Lebanese bread, but you can use pita bread or just served in a platter with other vegetables and pickles.  INGREDIENTS 600g boneless, skinless chicken thigh fillets 1 tsp ground turmeric 1 tsp ground cinnamon 1 tsp ground coriander 1 tsp ground cumin 1/4 tsp cayenne pepper  4 big garlic cloves, crushed finely grated zest of 1 lemon juice of 1/2 lemon 4 Tbsp Greek yoghurt olive oil Maldon sea salt flakes freshly ground black pepper To serve 6-8 round flatbread of your choosing 200g good-quality hummus or Greek yoghurt 4 large tomatoes, sliced, then each slice cut in half 1 large red onion, halved and finel...

FALAFEL WITH TOMATO & RADISH SALAD

I love falafels! Usually I make a tabouhle salad to accompany them, but we had a lot of radishes in the garden and tried this salad instead. I must say it was delish! A very refreshing salad. Today, I added some mini bocconcini, baby spinach, rocket and baby kale and a splash of lemon juice. It was beautiful!    Very easy to make and they are sooo tasty! I used bought Hummus, but you can make your own. It's very easy. INGREDIENTS: 2 X 400 g tins chickpeas, drained and rinsed 1/3 cup mint leaves, coarsely chopped 1/3 cup Italian parsley, coarsely chopped 1 1/2 Tbsp lightly toasted pine nuts 1 egg 1 garlic clove, crushed 1 1/2 tsp ground cumin 1 tsp ground coriander 1/2 tsp bicarbonate of soda plain flour for dusting 1Tbsp olive oil To serve Natural yoghurt (with 1 Tbsp lemon and 1 clove crushed garlic - optional) Grilled flatbread Hummus (optional) Tomato and radish salad 200g grape tomatoes, halved 4 radishes, trimmed and thinly sliced ...
