PIQUANT BUFFALO MOZZARELLA BITES

  This is a very simple yet delicious recipe that can be part of a tapas, nibbles or mezze style of dinner, or served as a side dish. It is very quick to make and healthy at the same time. Ingredients 30g (1/4) cup chopped semi-dried tomatoes 2 Tbsp capers 2 Tbsp chopped parsley 6 olives, pitted 1 tsp orange zest, chopped 2 buffalo mozzarella cheeses or 250g bocconcini Freshly ground black pepper Extra virgin olive oil, to serve Method Put all ingredients, except for the oil in the bowl of a small food processor and pulse until they are finely chopped. Tear the cheeses into small bite-sized pieces and arrange on a serving plate. Spoon the tomato mixture over the pieces of mozzarella and season with freshly ground black-pepper.  Drizzle with the extra virgin olive oil and serve. Serves 4 as a side dish.

FESTIVE DELI WREATH - ANTIPASTO

This is great for entertaining or as part of an antipasto platter. It takes nothing to prepare and it is delicious. Just use your imagination and fill the skewers with some yummy ingredients. For this one, I used the following ingredients, but you can change them according to your preferences. I also made some meatless ones for the vegetarians. INGREDIENTS pitted black kalamata olives stuffed green olives thinly sliced chorizo  thinly sliced salami mini bocconcini cocktail onions thinly sliced Jarlsberg cheese hummus filled bell peppers Serrano ham mixed mini tomatoes basil pea shoot sprouts  extra-virgin olive oil raspberry finishing vinegar crispbread and crustini METHOD: Thread deli delights onto short skewers, arrange around a bowl in a serving platter, add some fresh herbs such as basil and peas shoots, drizzle with extra virgin olive oil and a sweet finishing vinegar - I used raspberry - and serve with biscuits and bread sticks. SERVES 6 - 10

HOMEMADE PIZZA

This is one of our favourite pizzas. I sometimes make the base - have tried different ones without flour, but when in a hurry, I just buy one of the thin pizza bases, bread bases or even make it with Lebanese bread. These toppings are also delicious with jamon serrano or prosciutto instead of the salami. INGREDIENTS 2 pizza bases 4 Tbsp tomato pasta sauce ( I like Roasted vegetables, Sundried tomato and roasted garlic or Tomato, olive and chilli ) 4-6 Tbsp grated Parmesan 8-12 slices marinated artichoke hearts 1 large marinated roasted capsicum, cut into thin slices 4 slices marinated roasted eggplant, thinly sliced 100g salami of your choice, sliced 200g bocconcini METHOD: Preheat the oven to 200°C fan forced. Put the pizza bases on two pizza pan trays. Add the tomato sauce and sprinkle with the parmesan cheese. Top with slices of artichoke, capsicum and eggplant. MEDITERRANEAN SALAD WITH DUKKAH CRUSTED DUCK

This is one of these salads that has many Mediterranean ingredients. I just used things that I had in hand, but you can change it and make it your own recipe. I didn't have much time for cooking and needed something fast. It turned out very nice. 😁 INGREDIENTS: 80g baby spinach and rocket leaves 1/2 red capsicum, cut into small cubes 5 medium tomatoes a handful of cherry tomatoes bocconcini 1/4 cup parmesan cheese 1/2 cup olives, pitted and chopped  coarsely Dressing 1 clove garlic, crushed 1 tsp Dijon mustard 2 tsp white balsamic vinegar 2 Tbsp extra virgin olive oil salt and pepper 2 duck breasts salt and pepper 1/4 cup your preferred dukkah METHOD Start with the salad. Mix the spinach and rocket leaves with the parmesan cheese in a big bowl ( if you serve it as an entree or in two separate plates if you are serving it as a main ). Sprinkle with the capsicum. FALAFEL WITH TOMATO & RADISH SALAD

I love falafels! Usually I make a tabouhle salad to accompany them, but we had a lot of radishes in the garden and tried this salad instead. I must say it was delish! A very refreshing salad. Today, I added some mini bocconcini, baby spinach, rocket and baby kale and a splash of lemon juice. It was beautiful!    Very easy to make and they are sooo tasty! I used bought Hummus, but you can make your own. It's very easy.
