CAULIFLOWER & PEA FRITTERS WITH HALLOUMI


This is quite a nice recipe and very low on calories. It was part of my Fast Day Diet. It has only 129 calories and it leaves you satisfied and not hungry. 

INGREDIENTS

50g cauliflower florets, trimmed and finely chopped
1/4 cup frozen baby peas, thawed
1 egg, whisked
1/2 Tbsp self-raising wholemeal flour
25g halloumi, finely chopped
olive oil for cooking
35g cherry tomatoes, halved
25g baby rocket leaves
1 Tbsp extra virgin olive oil
1 tsp balsamic vinegar

METHOD:
Place the cauliflower, peas, egg, flour and halloumi in a bowl. 


Season to taste and mix until well combined.


Put the rocket and the tomatoes in a small serving bowl. Drizzle with the olive oil and vinegar and set aside.


Heat a little oil in non-stick frying pan over low heat. For each fritter, spoon 2 tablespoons of the mixture into the pan and press firmly into rounds. Cook for 5 minutes, then carefully flip the fritters and cook the other side for 4 minutes or until golden and cooked through.


Put the fritters on the bowl, next to the salad and serve warm.
