CREAMED CORN


This creamed sweetcorn recipe is from the book 'Jamie's Dinners' from Jamie Oliver. As he says in his book, it's truly delicious and a great alternative to mash potato or polenta. It is very easy to do and worked very well with the sausages and the rest of the side dishes I cooked for a winter's dinner when you feel like comfort food.

INGREDIENTS
400g fresh corn (cobs or frozen)
butter
a pinch of dried chilli flakes
crème fraîche or sour cream
zest of an orange
baby mint leaves

METHOD:
If you are using corn cobs, using a knife, cut all kernels and put them in a saucepan with about 100ml water and the chilli flakes. 
Cook with the lid on, on a medium heat, until the corn is tender.
Then place it in a food processor and blend until creamy and smooth. At this point you can add a little crème fraîche.
Season to taste with salt and pepper and serve sprinkled with some baby mint leaves and orange zest.

Serves 4 - 6


Here it was served as a side dish with some grated carrot and apple salad, a traditional Spanish dish called 'Guisantes con jamón' and pork sausages. Certainly delicious.
