This is a very quick and excellent recipe to celebrate a special occasion. It's sooo beautiful!

INGREDIENTS
2 Tbsp tomato sauce (ketchup)
2/3 cup (220g) mayonnaise
3 Tbsp (65g) mascarpone cheese
Lemon or orange juice and garlic and chilli sauce, to taste (or Tabasco)
500 gr raw prawns, peeled with tail intact
3 garlic cloves, crushed
olive oil
100 gr smoked salmon, cut into small pieces
1/2 telegraph cucumber, thinly sliced on an angle
1 cos lettuce, use the small leaves only
lumpfish roe, to garnish
METHOD:
Combine the tomato sauce, mayonnaise and mascarpone in a bowl. Add lemon juice and garlic and chilli sauce to taste, then season if necessary.
Put oil and garlic in a frying pan. Cook the prawns until tender and reserve.
Arrange the lettuce leaves and cucumber slices in 4 martini glasses or glass serving bowls. Add a spoonful of sauce, some prawns and another spoonful of sauce.
I removed the tails before putting the prawns in the glass. Easier to eat!

Arrange smoked salmon on the side of the glass, pile some more prawns on top of sauce and garnish with roe.
Serves 4
Equally yummy if you use cooked prawns instead of raw. 😋
