These rolls are delicious served with a salad or or anything else you enjoy eating. You can try pasta, rice, mash potatoes, chips, etc. They have a lovely combination of flavours and are very low on fat. Perfect for a diet dish.
INGREDIENTS
400g turkey escalopes
4 Tbsp Dijon mustard
4 slices prosciutto or jamón serrano
mixed dried herbs such as Provence or Tuscan
sea salt & freshly ground black pepper
METHOD:
Preheat the oven to 180°C.
Put escalopes between two sheets of glad wrap paper and pound with a mallet until they are thin.
If necessary, trim any fat from the Turkey escalopes, then arrange each one on a sheet of aluminium foil or greaseproof paper.
Coat the escalopes with a tablespoon of mustard, and top with a slice of prosciutto. Scatter over the herbs.
Roll the escalopes and season with salt and pepper.
Seal up the parcels and place them on a baking tray.
Bake in the oven for about 25 minutes.
Remove the rolls from the oven. Open the parcels, taking care of not getting burnt.
Transfer the parcels into a non-stick frying pan with a little bit of olive oil.
Fry for about 3 minutes each side or until they are golden brown.
Serve immediately.
