SALMON & DILL RICE CAKE


Lovely flavours. This also makes a great work lunch; just double the ingredients. Combine the cheese and the dill at home then pack the remaining ingredients separately and assemble the rice cakes at work.

INGREDIENTS

1 Tbsp cottage cheese
1/2 tsp finely chopped fresh dill
1/2 tsp finely grated lemon rind
1 x 7g rice cake (I like brown rice & quinoa)
35g smoked salmon slices (1 slice)
1/2 tsp fresh dill, extra

METHOD:
Combine cheese, dill and rind in a small bowl. Add some freshly ground pepper if you like.


Spread cheese over rice cake and top with the salmon. Sprinkle with extra dill leaves. Serve immediately.
