This dish is very yummy and it feels you up and don't feel hungry even though it is very low on calories. It is easy to prepare and doesn't take long to cook. Healthy, tasty and light.
INGREDIENTS
163 Calories
80g extra-lean minced pork
1 Tbsp fresh breadcrumbs
1 Tbsp milk
1 tsp finely grated lemon rind
1/2 tsp fennel seeds
1/4 tsp dried chilli flakes
1/2 medium red apple, sliced thinly
1/2 cup loosely packed small mint leaves
1 Tbsp lemon juice
20g baby spinach leaves
lemon wedges to serve
METHOD:
Combine mince, breadcrumbs, milk, rind, fennel and chilli in a medium bowl. Season.
Divide the mixture into six portions. Roll each portion into a ball. Thread the balls onto two skewers.
Heat a medium non-stick frying pan over medium-high heat. Cook the kebabs for 6 minutes, turning, or until browned and cooked through.
Transfer to a plate and cover to keep warm.
Meanwhile, combine the apple, mint and juice in a small bowl.
Serve kebabs with the apple salad, spinach leaves and lemon wedge.
