This salad is delicious and it fills you up. You don't feel hungry. It's also super healthy.
INGREDIENTS
220 Calories
15g mesclun
3 red radishes, trimmed, sliced thinly
1 green onion, sliced thinly
50g cherry tomatoes, halved
30g snow peas, sliced thinly
1/2 cup (115g) canned brown lentils, drained & rinsed
1 Tbsp lemon juice
1/2 fresh long chilli, sliced thinly
1 Tbsp ricotta
10g walnuts, toasted and chopped coarsely
METHOD:
Combine mesclun, radish, onion, tomatoes, snow peas and lentils in a large bowl.
Combine the lemon juice and chilli.
Drizzle over the salad and toss gently to combine.
Sprinkle the salad with the ricotta and the walnuts and season to taste.
Serves 1
