PICO DE GALLO SALSA



INGREDIENTS
2 vine-ripened tomatoes, seeds removed, thinly sliced
1 small red onion, thinly sliced
4 long green chillies, seeds removed, thinly sliced
1 cup chopped coriander leaves
2 garlic cloves, finely chopped
Juice of 2 limes
1/4 cup (60 ml) olive oil
1 tsp ground cumin

METHOD:
To make the Pico de gallo, mix all ingredients in a bowl with salt and pepper.
Makes 2 cups
Serve with fish tacos or as a side salad with Mexican food.
